Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds.
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ¼ cup freshly squeezed lemon juice About 2 lemons.
  • 1 piece zest of lemon
  • 6 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, chopped For garnish.

Instructions
 

  • Start by seasoning the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the chicken breasts to the skillet. Cook for about 5-7 minutes on each side or until the chicken is golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set it aside on a plate.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant.
  • Pour in the chicken broth and lemon juice, scraping any browned bits from the bottom of the skillet. Bring the mixture to a simmer.
  • Add the lemon zest and stir in the butter, whisking until the sauce is smooth and slightly thickened. Season the sauce with additional salt and pepper to taste.
  • Return the chicken breasts to the skillet, spooning the sauce over them. Let them simmer in the sauce for an additional 2-3 minutes to absorb the flavors.
  • Serve hot, garnishing each plate with fresh parsley.

Notes

For a more intense lemon flavor, feel free to add extra lemon juice or zest.
This dish pairs excellently with steamed vegetables or a fresh salad.
You can substitute fresh parsley with other herbs like thyme or basil for a different flavor profile.
