  • 3 cups mashed potatoes cooked
  • 1 ½ cups stuffing cooked
  • 3 eggs
  • ¼ cup green onion diced
  • 1 cup sharp cheddar cheese grated
  • 2 cups turkey cooked, chopped
  • 1 teaspoon black pepper
  • ¼ teaspoon red pepper
  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • vegetable oil for frying

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine mashed potatoes, stuffing, eggs, green onion, cheddar cheese, turkey, black pepper, red pepper, and garlic powder. Mix until well combined.
  • Scoop about ¼ cup of the mixture and shape into balls using your hands.
  • Roll each ball in panko breadcrumbs to coat evenly.
  • Place the balls on the prepared baking sheet, leaving space between each.
  • Bake for 25 to 30 minutes, until golden brown and heated through.
  • Let cool slightly before serving to allow the balls to firm up.

Notes

To reheat, place stuffing balls on a baking sheet and warm in a 350°F oven for 10 minutes. For extra crisp, pan fry in hot oil until golden. Store in an airtight container in fridge up to 4 days, or freeze for up to 3 months.
