  • 2 tablespoons honey sweet note that balances the lime
  • 1 tablespoon vegetable oil to help everything blend and keep the chicken moist
  • 1 lime juice to punch up freshness and tang
  • 1 teaspoon minced garlic brings out savory goodness
  • 1 teaspoon fresh cilantro chopped fine to add a little herbal zing
  • 2 tablespoons red bell pepper finely chopped - adds color and mild sweetness
  • 4 boneless chicken breast halves enough for a small crowd
  • Wooden or metal skewers for threading the chicken on the grill right after

  • Mix together soy sauce, honey, vegetable oil, lime juice, minced garlic, cilantro, and red bell pepper in a bowl.
  • Place chicken breasts in a resealable bag or shallow dish and pour marinade over. Marinate in the fridge for at least 30 minutes.
  • Prep your pressure cooker with a cup of water or broth and ensure sealing ring is seated properly.
  • Remove chicken from marinade and thread onto skewers snug but not too tight.
  • Place a trivet inside the cooker, set the chicken skewers on top, and cook on high pressure for 8 minutes.
  • When done, do a quick release, then grill skewers on medium-high heat for 6-7 minutes per side until char marks form and juices run clear.
  • Serve hot with extra lime wedges if desired.

Notes

Serve the skewers hot with additional lime wedges, if desired. Store leftovers in an airtight container in the fridge for up to 3 days.
