  • cup shredded cheese any variety
  • 2 teaspoons butter

  • First, preheat your non-stick skillet over medium heat. This is real important so your chaffles don’t stick or burn.
  • While skillet’s heating, spread butter on one side of each chaffle. Butter’s your golden crust maker here.
  • Place one chaffle butter-side down into the skillet. You’ll wanna hear that quiet sizzle so you know it’s cooking right.
  • Sprinkle shredded cheese on the chaffle still in the skillet. This is the gooey middle, so don’t be shy with the cheese.
  • Top it off with the second chaffle, butter-side up. Press down just a bit to hold it all cozy.
  • Cook about 3-4 minutes until the bottom’s golden brown. Then carefully flip the whole thing so you don’t spill cheese everywhere. Cook another 3-4 minutes until both sides are golden and tasty melted cheese is breathable inside.
  • Now, pull it off the skillet, slice it up real nice, and serve it right away while it still got that tender pull going on.

Notes

I used these basic keto chaffles. They can be frozen and reheated later for easy meal prep. It’s best to take a “low and slow” approach with grilled cheese. This gives the chaffle enough time to soak up the butter and become golden brown while also giving the cheese on the inside enough time to melt and become gooey. If your chaffles are cooking too quickly, you can cook with a lid on the pan to melt the cheese quicker.
