  • 3 pounds boneless skinless chicken thighs perfect for shredding
  • 3 tablespoons olive oil split so you coat and crisp
  • ½ cup ketchup to bring that tang
  • ½ cup Sriracha chili sauce for the spicy kick
  • ½ cup plus 2 tablespoons honey to balance heat with sweetness
  • ½ cup water to help your broth depth reach its full potential
  • 3 tablespoons lime juice citrus love
  • 2 teaspoons grated lime zest citrus love
  • 2 teaspoons minced garlic for that depth of flavor
  • 1 teaspoon ground ginger for that depth of flavor
  • 12 slices part-skim mozzarella cheese halved

  • Start by preheating your oven to 375°F (190°C). You gotta get this ready so the chicken caramelizes just right.
  • Mix ketchup, Sriracha, ½ cup honey, water, lime juice, lime zest, garlic, and ginger in a big bowl. This sauce is your bang bang star here.
  • In another bowl, toss chicken thighs with 2 tablespoons olive oil and sprinkle with salt and pepper. You wanna season it good.
  • Spread that chicken in a baking dish and pour the sauce over, swiping it all around so every piece’s covered. Cover with foil tight.
  • Bake covered for 20 minutes so flavors soak into the thighs real deep.
  • Take off the foil and bake another 10 minutes. This caramelizes the sauce and cooks the chicken fully through.
  • Let the chicken rest 5 minutes. Then grab two forks and shred. Mix shredded chicken with the last 2 tablespoons honey for that sweet finish. Stack it on pretzel buns with mozzarella and you’re golden.

Notes

Serve warm with gooey melted mozzarella. Toast buns briefly to add extra crispness.
