In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, and diced jalapenos. Mixture should be well combined.
Spread half of the cheese mixture evenly on two slices of bread. Top each with the remaining slices of bread to form two sandwiches.
Heat a skillet or frying pan over medium heat. Add 1 tablespoon of butter and allow it to melt, coating the pan.
Place one sandwich in the skillet and cook for about 4-5 minutes or until the bread is golden brown. Carefully flip the sandwich using a spatula.
Add the remaining tablespoon of butter to the skillet. Cook the other side of the sandwich for another 4-5 minutes, or until golden and crispy. Repeat this process with the second sandwich.
Remove from the skillet and let cool for a minute before slicing in half. Serve warm.
For an extra kick, consider adding some diced bacon to the cheese mixture.
Adjust the number of jalapenos based on your heat preference.
