  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1 cup corn kernels fresh or frozen
  • 2 tablespoons cilantro chopped
  • 1 green onion finely chopped, green part only
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cumin
  • teaspoon cayenne pepper
  • 1 large egg beaten
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • 1 pickled jalapeño seeded and diced
  • 1 tablespoon pickled jalapeño juice
  • safflower oil for frying
  • 1 tablespoon bacon grease optional

  • Melt the butter in a large bowl and add minced garlic. Cook until fragrant and golden.
  • Stir in corn kernels, cilantro, green onion, salt, black pepper, cumin, and cayenne. Mix well.
  • Add beaten egg to the mixture and combine thoroughly.
  • Sprinkle in flour and baking powder, mix to get a fluffy texture.
  • Heat a skillet over medium heat, add oil. Drop spoonfuls of mixture, flatten slightly. Cook 4-5 minutes per side.
  • Remove fritters when golden brown, optionally add bacon grease to oil for last batch.
  • Serve with poblano buttermilk dressing on the side and enjoy hot and crispy.
