Melt the butter in a large bowl and add minced garlic. Cook until fragrant and golden.
Stir in corn kernels, cilantro, green onion, salt, black pepper, cumin, and cayenne. Mix well.
Add beaten egg to the mixture and combine thoroughly.
Sprinkle in flour and baking powder, mix to get a fluffy texture.
Heat a skillet over medium heat, add oil. Drop spoonfuls of mixture, flatten slightly. Cook 4-5 minutes per side.
Remove fritters when golden brown, optionally add bacon grease to oil for last batch.
Serve with poblano buttermilk dressing on the side and enjoy hot and crispy.
