Instructions
In a large bowl, toss together green cabbage, red cabbage, corn, jalapeno, and green onions.
In a smaller bowl, whisk mayonnaise, lime juice, parsley, black pepper, salt, and chili powder until smooth.
Pour dressing over cabbage mix and toss gently to coat.
Transfer mixture to a steaming basket or pressure cooker-safe dish and place inside pressure cooker. Add one cup of water to the bottom of the cooker.
Seal the lid and set to high pressure for 2 minutes. Quick release pressure immediately after cooking.
Stir gently and sprinkle with cotija or feta cheese before serving.
