  • 8 cups green cabbage shredded
  • 2 cups red cabbage shredded
  • 2 cups canned corn well drained
  • 1 large jalapeno diced
  • ½ cup green onions sliced
  • 1 cup mayonnaise
  • 1 tablespoon lime juice fresh
  • ¼ cup parsley chopped
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • ½ teaspoon chili powder
  • ½ cup cotija cheese or feta

  • In a large bowl, toss together green cabbage, red cabbage, corn, jalapeno, and green onions.
  • In a smaller bowl, whisk mayonnaise, lime juice, parsley, black pepper, salt, and chili powder until smooth.
  • Pour dressing over cabbage mix and toss gently to coat.
  • Transfer mixture to a steaming basket or pressure cooker-safe dish and place inside pressure cooker. Add one cup of water to the bottom of the cooker.
  • Seal the lid and set to high pressure for 2 minutes. Quick release pressure immediately after cooking.
  • Stir gently and sprinkle with cotija or feta cheese before serving.
