Preheat your oven to 350°F. Line a 9" x 13" baking pan with parchment paper. Set aside.
In a large bowl, combine flour, granulated sugar, brown sugar, cinnamon, baking powder, baking soda, and salt. Whisk to break up clumps.
Add the eggs, yogurt, vegetable oil, and vanilla extract to the dry ingredients. Mix until just combined.
Fold in the grated apples gently into the batter.
Pour the batter into the prepared 9" x 13" pan. Place the pan into the pressure cooker for even cooking.
Bake for 30-35 minutes. Check with a toothpick; if clean, remove. Let it cool for 10 minutes before transferring to a wire rack.
Frost with cream cheese frosting once it's completely cooled.
Notes
Decorate with swirls of caramel or sprinkle with cinnamon for extra flavor. Use a wire rack to cool completely for the best texture.
