  • 2 lbs Beef chuck cut into 1-inch cubes
  • 1 cup Guinness beer stout
  • 2 tablespoon Vegetable oil
  • 1 Onion chopped
  • 3 Carrots sliced
  • 2 cloves Garlic minced
  • 2 cups Beef broth low sodium
  • 1 tablespoon Tomato paste
  • 3 Potatoes peeled and diced
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • 1 bay leaf Bay leaf
  • to taste Salt
  • to taste Black pepper freshly ground

  • Heat vegetable oil in the pressure cooker over medium heat.
  • Brown the beef cubes in batches and set aside.
  • Sauté onions and garlic until translucent.
  • Add tomato paste and cook for 2 minutes.
  • Return beef to pot and pour in Guinness and beef broth.
  • Add carrots, potatoes, thyme, rosemary, bay leaf, salt, and pepper.
  • Seal the pressure cooker and cook on high pressure for 45 minutes.
  • Allow natural pressure release for 15 minutes, then quick release any remaining pressure.
  • Open the lid carefully and stir the stew.
  • Serve hot with crusty bread to soak up the rich broth.

Notes

For best results, use fresh herbs and a good quality stout beer. This stew improves in flavor if made a day ahead.
