  • 0.5 pound Irish bacon diced fine
  • 2 large potatoes peeled and cubed
  • 15 ounce can diced tomatoes with juice
  • 1 cup chicken stock or enough to cover ingredients
  • Salt and black pepper to taste
  • 2 cups Savoy cabbage leaves thinly sliced

  • Heat pressure cooker on medium heat and brown Irish bacon for 5 minutes until fat is rendered.
  • Add cubed potatoes and stir to coat in bacon fat.
  • Pour in diced tomatoes with juice and add chicken stock. Stir and bring to a boil.
  • Seal pressure cooker, reduce heat, and simmer for 15 minutes.
  • Open lid, stir in sliced cabbage, and cook another 10 minutes until tender.
  • Season with salt and pepper to taste. Serve hot.

Notes

Let soup cool completely before storing. Keeps well in airtight containers in fridge up to 4 days or freeze in portions for longer storage. Reheat gently to avoid mushy cabbage.
