  • 1 jar (16 ounces) roasted red peppers plus 2 tablespoons liquid from the jar
  • 0.5 large onion diced small
  • 1 tablespoon minced garlic
  • 4 cups vegetable broth
  • 1 tablespoon Italian seasoning blend
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 pound whole wheat penne
  • 1 cup crumbled goat cheese optional

  • First, toss in the roasted red peppers with a couple tablespoons of their liquid. Add your diced onion, minced garlic, and the veggie broth.
  • Sprinkle in the Italian seasoning, salt, and black pepper so you get that perfect savory balance.
  • Stir the whole wheat penne pasta into the mix, pressing down gently so it’s mostly submerged in the liquid. Gotta make sure it’ll cook evenly.
  • Pop on the lid, set the valve to sealing position, and choose Manual High Pressure cook for exactly 5 minutes. Not too long, trust me on this one.
  • When the timer beeps, carefully quick release the pressure so you cool down the pot fast and don’t overcook the pasta.
  • Open the lid, stir in that crumbled goat cheese until it melts and the sauce turns creamy and dreamy.

Notes

Let pasta sit for a couple minutes after stirring in cheese to thicken the sauce. Add splash of broth when reheating leftovers. Swap goat cheese for cream cheese or vegan cheese if desired.
