Instructions
Instructions
First, toss in the roasted red peppers with a couple tablespoons of their liquid. Add your diced onion, minced garlic, and the veggie broth.
Sprinkle in the Italian seasoning, salt, and black pepper so you get that perfect savory balance.
Stir the whole wheat penne pasta into the mix, pressing down gently so it’s mostly submerged in the liquid. Gotta make sure it’ll cook evenly.
Pop on the lid, set the valve to sealing position, and choose Manual High Pressure cook for exactly 5 minutes. Not too long, trust me on this one.
When the timer beeps, carefully quick release the pressure so you cool down the pot fast and don’t overcook the pasta.
Open the lid, stir in that crumbled goat cheese until it melts and the sauce turns creamy and dreamy.
Notes
Let pasta sit for a couple minutes after stirring in cheese to thicken the sauce. Add splash of broth when reheating leftovers. Swap goat cheese for cream cheese or vegan cheese if desired.
