Select the 'Sauté' function on the Instant Pot and add the olive oil. Once hot, add the diced onion and cook until translucent, about 3-4 minutes.
Add minced garlic and cook for an additional minute until fragrant.
Add the pork cubes to the pot, seasoning them with salt, pepper, and thyme. Brown the meat on all sides, about 5-7 minutes.
Pour in the chicken broth, maple syrup, and soy sauce. Stir well to combine all ingredients.
Add the sliced carrots and cubed potatoes on top of the pork mixture.
Close the lid of the Instant Pot and set the valve to sealing. Select the 'Manual' or 'Pressure Cook' setting and cook on high pressure for 25 minutes.
Once the cooking time is completed, allow for a natural release of pressure for 10 minutes, then carefully switch the valve to venting to release any remaining pressure.
If you prefer a thicker stew, mix cornstarch with water in a small bowl until smooth. Turn the Instant Pot back to 'Sauté,' add the cornstarch mixture, and stir for about 2-3 minutes until the stew thickens.
