Ingredients
  

  • 1 pound carrots, peeled and sliced Sliced into equal-sized pieces, about ¼ to ½ inch thick.
  • 2 tablespoons honey
  • 2 tablespoons unsalted butter
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice Optional.
  • fresh parsley for garnish Optional.

Instructions
 

  • Begin by peeling the carrots and slicing them into equal-sized pieces, about ¼ to ½ inch thick.
  • In a medium saucepan, place the sliced carrots and cover them with water. Bring to a boil over medium-high heat.
  • Reduce the heat and let the carrots simmer for about 10 minutes, or until they are slightly tender but not fully cooked.
  • Drain the carrots and return them to the saucepan.
  • Add the butter, honey, salt, and pepper to the carrots. Toss them well to ensure the carrots are coated evenly.
  • Cook over medium heat for an additional 5-7 minutes, stirring occasionally, until the honey and butter caramelize slightly, creating a glaze.
  • If using, drizzle the fresh lemon juice over the glazed carrots and toss again to combine.
  • Remove from heat and transfer the honey-glazed carrots to a serving dish.
  • Garnish with freshly chopped parsley if desired and serve warm.

Notes

For a touch of spice, consider adding a pinch of cinnamon or a dash of cayenne pepper.
You may use baby carrots for a quicker prep, simply omit the peeling and slicing.
These honey-glazed carrots can be made ahead and reheated before serving.
