Equipment

Ingredients

Ingredients for Cornbread Poppers

  • 1 cup yellow cornmeal fine or medium grind both work, don’t sweat it too much
  • 1 cup all-purpose flour the backbone for your poppers
  • cup granulated sugar to sweeten things right
  • 1 tablespoon baking powder for that perfect rise
  • ½ teaspoon salt just enough to bring out all the flavors
  • 1 cup milk or buttermilk your preference, buttermilk makes it tangy good
  • 2 large eggs at room temp to keep batter smooth
  • ½ cup unsalted butter melted and cooled a bit so it mixes easy
  • ¼ cup honey plus extra to drizzle, and 1 teaspoon vanilla extract optional but adds nice warmth

Instructions

The Exact Process From Start to Finish

  • Preheat your oven to 350°F. Gotta have that ready before you mess with the batter.
  • Grab a big bowl and whisk cornmeal, flour, sugar, baking powder, and salt. Make sure it’s all blended evenly.
  • In another bowl, mix milk, eggs, melted butter, honey, and if you’re using it, vanilla extract. Stir it so it’s nice and combined but don’t overdo it.
  • Pour the wet stuff into the dry and give it a gentle stir until just combined. You don’t want to toughen it up by over mixing.
  • Grease a mini muffin tin real good. Fill each cup about ⅔ full with your batter. These little poppers gonna puff up nice.
  • Bake for 15 to 20 minutes. Check with a toothpick in the center, if it comes out clean, they’re done. You’ll smell that sweet corn and honey aroma as they bake.
  • Let them cool just a bit before popping out the tin. Drizzle on melted butter, honey, and a pinch of salt for that honey butter finish. You’re set to dig in.

Notes

Use fine cornmeal for a tender, soft popper texture. Honey adds natural sweetness; adjust to taste if you prefer less sweet. Melted butter enhances richness and classic cornbread flavor. Do not overmix the batter to keep poppers light and fluffy. Fill the popper pan or mini muffin tin evenly for consistent baking. Brush warm poppers with extra honey butter for a glossy finish. Store leftovers in an airtight container at room temperature for 2 days.
