Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds total.
  • 1 cup honey BBQ sauce
  • 1 tablespoon olive oil For the chicken marinade.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste none salt and pepper
  • 2 pieces zucchini Sliced.
  • 1 piece red bell pepper Chopped into chunks.
  • 1 piece yellow bell pepper Chopped into chunks.
  • 1 piece red onion Sliced.
  • 1 tablespoon olive oil For the veggie medley.
  • 1 teaspoon Italian seasoning

Instructions
 

  • Preheat the grill to medium-high heat.
  • In a mixing bowl, combine the honey BBQ sauce, olive oil, garlic powder, onion powder, salt, and pepper. Mix well to create a marinade.
  • Add the chicken breasts to the bowl, ensuring they are completely coated in the marinade. Allow them to marinate for at least 10 minutes (or up to 2 hours in the refrigerator for more flavor).
  • While the chicken is marinating, prepare the veggies. In another bowl, toss the sliced zucchini, chopped bell peppers, and red onion with olive oil, Italian seasoning, salt, and pepper.
  • Place the marinated chicken on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  • After flipping the chicken for the first time, add the prepared vegetables to the grill. Grill them for about 5-7 minutes or until they are tender and have nice grill marks.
  • Once the chicken and veggies are done, remove them from the grill and let the chicken rest for a few minutes before slicing.
  • Serve the sliced honey BBQ chicken alongside the grilled veggie medley for a colorful and satisfying meal.

Notes

For a spicier kick, consider adding a dash of cayenne pepper to the marinade.
You can substitute in any seasonal vegetables you prefer for the veggie medley.
If you don't have a grill, you can cook the chicken and vegetables on a stovetop grill pan.
