  • 2 lbs Chicken breast
  • 2 tablespoon Olive oil
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon Paprika
  • ½ teaspoon Garlic powder
  • 1 cup BBQ sauce
  • ¼ cup Honey
  • 1 cup Long grain rice
  • 1 cup Black beans rinsed and drained
  • 1 cup Corn canned or frozen
  • 1 head Romaine lettuce chopped
  • ½ cup Shredded cheddar cheese
  • ¼ cup Pickled onions
  • ¼ cup Chopped cilantro
  • ¼ cup Ranch dressing to drizzle

Instructions

  • Preheat oven to 375 degrees Fahrenheit for quick roasting of chicken.
  • Mix olive oil, salt, pepper, paprika, garlic powder, bbq sauce, and honey for a marinade in a bowl.
  • Coat chicken breasts thoroughly with the marinade. Bake for 25-30 mins until internal temperature is 165 degrees Fahrenheit.
  • Cook rice as per package instructions. Use pressure cooker steam cues if cooking there.
  • Warm black beans in a separate pot gently until heated through.
  • Shred the baked chicken using two forks.
  • Layer bowls with rice, black beans, and shredded chicken. Add bbq sauce, lettuce, cheddar, pickled onions, cilantro, and ranch drizzle.
