Instructions
Preheat oven to 375 degrees Fahrenheit for quick roasting of chicken.
Mix olive oil, salt, pepper, paprika, garlic powder, bbq sauce, and honey for a marinade in a bowl.
Coat chicken breasts thoroughly with the marinade. Bake for 25-30 mins until internal temperature is 165 degrees Fahrenheit.
Cook rice as per package instructions. Use pressure cooker steam cues if cooking there.
Warm black beans in a separate pot gently until heated through.
Shred the baked chicken using two forks.
Layer bowls with rice, black beans, and shredded chicken. Add bbq sauce, lettuce, cheddar, pickled onions, cilantro, and ranch drizzle.
