Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium potatoes, diced (about 4 cups)
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup beef broth
  • 2 teaspoons Italian seasoning
  • to taste salt
  • to taste pepper
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Add the chopped onion and minced garlic to the skillet. Sauté for an additional 3-4 minutes until the onion is translucent.
  • In a large mixing bowl, combine the diced potatoes, mixed vegetables, diced tomatoes (with liquid), beef broth, Italian seasoning, salt, and pepper. Mix until well combined.
  • Stir in the cooked ground beef mixture into the potato and vegetable mixture.
  • Transfer the entire mixture into a greased 9x13 inch baking dish and spread it out evenly.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  • After 45 minutes, remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly and the potatoes are tender.
  • Let it cool for a few minutes before serving.

Notes

Feel free to customize the vegetables based on your preferences, such as adding bell peppers or corn.
You can make this dish ahead of time and store it in the refrigerator. Just increase the baking time if cooking from cold.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
