Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground turkey and cook until browned and fully cooked, about 5-7 minutes. Use a wooden spoon to break it apart as it cooks.
Add the minced garlic and grated ginger to the skillet, stirring for about 1 minute until fragrant.
Add the broccoli, bell pepper, snap peas, and carrots to the skillet. Stir-fry the vegetables for about 5-7 minutes, or until they are tender yet crisp.
In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, and water until smooth.
Pour the teriyaki sauce over the cooked turkey and vegetables in the skillet. Stir well to coat everything evenly and cook for an additional 2-3 minutes until the sauce thickens.
Remove from heat and stir in the chopped green onions.
Serve the stir fry over cooked rice or noodles if desired, and sprinkle with sesame seeds for garnish.
