Heat 1 tablespoon olive oil in a large skillet over medium heat. Add ground turkey, season with salt and pepper, and cook for 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
Add remaining 1 tablespoon olive oil to skillet. Add sweet potatoes and cook for 8-10 minutes, stirring occasionally.
Add in the diced onion and 2 tablespoons of water. Stir and cook for 3-4 minutes until the onion is translucent and sweet potatoes are fork-tender.
Add bell peppers to the skillet and cook for 3-4 minutes until slightly softened but still crisp.
Stir in chopped kale, season with salt and pepper, and sauté for 2-3 minutes until wilted and vibrant.
Return the cooked turkey to the skillet. Sprinkle in chili powder, cumin, paprika, and garlic powder. Stir well and cook for another 2-3 minutes to combine flavors.
Top with shredded pepper jack cheese and cover skillet for 1-2 minutes to melt. Serve warm with toppings of choice.
