  • 1 lb Ground turkey
  • 2 tablespoons Taco seasoning
  • 2 tablespoons Tomato paste
  • 10 oz Tortilla chips
  • 4 cups Shredded cheddar cheese
  • 1 cup Corn kernels
  • 1 cup Black beans
  • 2 Jalapenos, sliced
  • 1 Red onion, diced
  • 1 Sweet bell pepper, diced

  • Preheat your oven to 375°F (190°C).
  • Heat a skillet over medium heat and cook ground turkey for 5-7 minutes until browned.
  • Stir in taco seasoning and tomato paste. Cook 2-3 minutes more to combine flavors.
  • On a large baking sheet, spread half of the tortilla chips evenly.
  • Add half of the cooked turkey, then layer half of the cheese, corn, beans, jalapenos, red onion, and bell pepper.
  • Repeat the layering with remaining ingredients.
  • Bake for 15-20 minutes until cheese is melted and golden. Let sit briefly before serving.

Notes

Make-Ahead Tip: Prep the turkey mixture up to 2 days early and store refrigerated. Reheat leftovers in oven or toaster oven at 300°F for best results. To keep nachos crispy, store chips separately from moist toppings when storing.
