  • 1 bowl for marinating

Ingredients
  

  • 1 lb boneless chicken breast, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • ½ cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • to taste seasoning salt
  • to taste seasoning pepper
  • garnish fresh parsley optional

Instructions
 

  • In a bowl, combine the olive oil, barbecue sauce, garlic powder, onion powder, paprika, salt, and pepper. Mix well to create a marinade.
  • Add the cubed chicken to the marinade. Toss until all pieces are evenly coated. Cover and refrigerate for at least 15 minutes to allow the flavors to develop.
  • Preheat the grill or grill pan over medium-high heat.
  • Thread the marinated chicken and pineapple onto the skewers, alternating between chicken and pineapple pieces.
  • Once the grill is hot, place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally and basting with additional barbecue sauce, until the chicken is fully cooked and has nice grill marks.
  • Remove the skewers from the grill and allow to rest for a few minutes before serving.
  • Garnish with fresh parsley, if desired, and serve warm.

Notes

Ensure that the chicken is cooked to an internal temperature of 165°F (75°C) for safety.
You can customize the skewers by adding vegetables like bell peppers, onions, or zucchini for extra color and nutrition.
For a spicy kick, consider adding some red pepper flakes to the marinade.
