  • 4 cloves Garlic grated
  • 1 tablespoon Ginger paste
  • ¼ cup Honey
  • 3 tablespoon Low-sodium soy sauce or use coconut aminos or low-sodium tamari
  • 1 large Lime zested
  • ¼ cup Lime juice freshly squeezed
  • 1 tablespoon Sriracha
  • 1 teaspoon Avocado oil plus more for grill grates
  • ¾ teaspoon Kosher salt
  • 1.5 pounds Boneless skinless chicken thighs
  • ½ teaspoon Cornstarch

  • Pineapple teriyaki salad
  • Lime wedges for serving
  • Sliced green onions for serving

Instructions

  • In a large bowl, mix grated garlic, ginger paste, honey, low-sodium soy sauce, lime zest, lime juice, sriracha, avocado oil, and kosher salt. Combine well.
  • Reserve 4 tablespoons of marinade and set aside. Toss chicken thighs in the remaining marinade and let sit for 20-25 minutes.
  • Preheat grill to 500°F (260°C). Add cornstarch to reserved marinade, heat on medium to thicken. Set aside.
  • Grill marinated chicken thighs on hot grates, turning after 4 minutes. Cook for an additional 3-4 minutes or until internal temp reaches 165°F.
  • Remove chicken from grill, brush with reserved glaze, tent with foil, and let rest before slicing and serving.
  • In a bowl, add rice, pineapple teriyaki salad, and top with sliced honey lime chicken. Add lime and green onions.

Notes

Serve the grilled chicken over rice with your choice of toppings for a complete meal.
