  • 4 boneless, skinless chicken breasts ready for some flavor
  • 2 cloves garlic finely chopped or grated
  • 1 Tablespoon lime juice brings zesty brightness
  • 3 Tablespoons olive oil to keep the chicken moist

  • for garnish fresh cilantro chopped
  • ½ cup peanut butter makes the sauce creamy and nutty
  • cup water to smooth out the peanut sauce
  • 1 lime juiced for extra tang
  • ¼ cup cilantro leaves for sauce flavor
  • 2 cloves garlic for the sauce, minced
  • 2 Tablespoons avocado or canola oil to give sauce a smooth finish
  • 2 Tablespoons sriracha adding a little spicy kick
  • 1 Tablespoon fish sauce with umami vibes
  • 1 Tablespoon soy sauce for saltiness
  • 2 teaspoons brown sugar to balance and sweeten up the sauce

  • In a bowl, mix garlic, lime juice, olive oil, salt, and pepper for the marinade. It’s simple but packs flavor.
  • Drop chicken breasts in the marinade, make sure they’re coated well. Let it sit for at least 30 minutes so those flavors soak in.
  • Set your pressure cooker with the sealing ring on and add chicken plus a bit of marinade liquid inside. Lock the lid, watch the float valve pop up, and set to cook.
  • Cook at high pressure for 10 minutes. Then let it go natural release for 5, this keeps the meat tender pull ready.
  • While chicken’s cooking, get your grill preheated to medium-high heat.
  • Carefully remove chicken from cooker and place on the grill. Grill for about 6-7 minutes on each side till you see grill marks and chicken’s cooked through.
  • For the peanut sauce, toss peanut butter, water, lime juice, cilantro, garlic, oil, sriracha, fish sauce, soy sauce, and brown sugar in a small saucepan. Stir gently over low heat till smooth and warm. Plate chicken, slather with peanut sauce, and sprinkle cilantro on top.
