Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs
  • 4 cups broccoli florets About 1 lb
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 1 teaspoon garlic powder
  • 1 cup Greek yogurt
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped Optional, for garnish

Instructions
 

  • Preheat your grill or grill pan over medium-high heat.
  • Pat the chicken breasts dry with paper towels and season with olive oil, salt, pepper, and garlic powder.
  • Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let rest.
  • In a pot of boiling salted water, add the broccoli florets and cook for about 3-4 minutes until bright green and slightly tender. Drain and set aside.
  • In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, and season with salt and pepper. Whisk until smooth to prepare the creamy garlic sauce.
  • Slice the grilled chicken into strips.
  • To assemble the bowls, divide the cooked broccoli evenly among four serving bowls. Top with sliced grilled chicken and drizzle generously with the creamy garlic sauce.
  • Garnish with fresh parsley if desired and enjoy!

Notes

This recipe is easily customizable; feel free to add quinoa, rice, or other veggies to the bowls.
For a spicier kick, add crushed red pepper flakes to the garlic sauce.
Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat before serving.
