  • 1 ½ cups plain Greek yogurt
  • 1 small box sugar-free Jell-O flavor of choice 0.3 oz or 10g
  • ½ cup boiling water must be boiling to activate gelatin
  • ½ teaspoon vanilla extract optional; enhances flavor

Preparation steps

  • Add the boiling water to a medium bowl, then pour in the sugar-free Jell-O mix. Whisk well until the powder completely dissolves.
  • Transfer about half of the yogurt to the bowl, whisking gently until fully incorporated.
  • Add the remaining yogurt and whisk until smooth and lump-free.
  • If desired, stir in ½ teaspoon of vanilla extract.
  • Divide the mixture between 2 parfait glasses. Cover with plastic wrap and chill for 1-2 hours until set. Serve with toppings if desired.

Notes

The water must be boiling to activate the gelatin. Storage: Keep covered tightly in fridge for up to 3-4 days. Flavors: Use your favorite Jell-O flavor, especially raspberry or orange. For creamsicle, add vanilla and orange Jell-O.
