  • 3 Egg yolks
  • 3 half shells Cream or milk
  • 1 cup Flour plus more if needed
  • 1 dash Salt

  • Beat the egg yolks lightly in a medium bowl.
  • Add cream or milk and a dash of salt, stir until combined.
  • Gradually add flour, mixing until the dough holds together but is not sticky.
  • Transfer dough onto a floured surface and knead for 5 minutes until smooth.
  • Roll out dough thin, let rest for 10-15 minutes.
  • Cut dough into noodles and let air dry at least 30 minutes.
  • Add noodles to boiling broth in pressure cooker, cook under pressure for 3-4 minutes and use natural release.

Notes

Let noodles rest and dry thoroughly before freezing. Store cooked leftovers in broth to prevent sticking.
