- 12 oz gluten-free pasta such as penne or fettuccine
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes optional
- 1 cup heavy cream
- 1 cup grated Parmesan cheese

- Fresh parsley, chopped for garnish
In a large pot, bring water to a boil. Add a generous pinch of salt and then the gluten-free pasta. Cook according to package instructions until al dente. Drain the pasta in a colander and set aside.
In the same pot or a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes, or until fragrant. Be careful not to let the garlic burn.
Lower the heat and add the heavy cream to the skillet. Stir and bring the mixture to a simmer.

For a lighter version, you can substitute half of the heavy cream with low-fat milk.
