Ingredients
  

  • 4 fillets sea bass About 6 ounces each.
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh ginger Finely chopped.
  • 1 medium onion Thinly sliced.
  • 3 cloves garlic Minced.
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 tablespoon sesame oil
  • to taste salt
  • to taste pepper
  • 2 green onions chopped For garnish.

Instructions
 

  • Begin by patting the sea bass fillets dry with a paper towel. Season both sides with salt and pepper.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Once the oil is hot, add the chopped ginger and sliced onion to the pan. Stir-fry for about 2-3 minutes until the onions are translucent and the ginger is fragrant.
  • Push the ginger and onion mixture to the side of the skillet. Carefully place the sea bass fillets in the center of the skillet, cooking for about 4 minutes on one side without moving them.
  • Gently flip the fillets over using a spatula and add the minced garlic to the oil and vegetables. Cook for another 3-4 minutes until the fish is cooked through and flakes easily with a fork.
  • Drizzle the soy sauce, rice wine, and sesame oil over the sea bass and let it simmer for an additional minute to combine the flavors.
  • Remove the skillet from heat and transfer the sea bass to a serving plate. Top with the ginger and onion mixture and garnish with chopped green onions.

Notes

For a crunchier texture, you can lightly coat the sea bass in cornstarch before frying.
Serve with steamed rice or stir-fried vegetables for a complete meal.
Adjust the amount of ginger and garlic based on your taste preference; both ingredients can be enjoyed for their strong flavor.
