Cook rice noodles according to package instructions. Drain and set aside.
Mince 2 cloves of garlic and grate half the ginger. Thinly slice the remainder for garnish.
In a large skillet, melt 1 tablespoon of butter over medium heat. Cook sliced garlic and ginger until fragrant (2 minutes). Remove and set aside.
Add 1 tablespoon butter to skillet. Add shrimp, minced garlic and ginger, soy sauce, and salt. Cook until shrimp turns pink (4-5 minutes). Remove and set aside.
Add last tablespoon of butter. Add sliced bell pepper and sugar snap peas. Cook until tender-crisp (3-4 minutes).
Pour in coconut milk and vegetable stock. Stir in fish sauce, brown sugar, lime zest and juice. Bring to simmer.
Return noodles to skillet, toss to coat. Add shrimp back in and heat through for 1-2 minutes.
Serve hot, topped with reserved crispy garlic and ginger plus optional cilantro.
Notes
Use pre-minced garlic/ginger or pre-peeled shrimp for convenience. Freezes well for meal prep.
