Instructions
Heat olive oil in pressure cooker pot over medium heat.
Add carrots and celery, cook until slightly softened.
Stir in green onions, garlic, and grated ginger. Sauté briefly.
Pour in chicken broth and add the cooked chicken. Stir in tamari or soy sauce.
Seal the lid and cook on high pressure for 10 minutes.
Allow natural pressure release for 10-15 minutes before opening.
Stir in sesame oil and chopped cilantro.
Serve hot with separately cooked rice noodles in each bowl.
Notes
Use freshly grated ginger for extra kick and adjust soy sauce to your sodium preference.
