Main ingredients

  • 2 lb chicken thighs trimmed and cut into bite-sized pieces
  • ½ cup corn starch
  • ¼ cup extra light olive oil for frying
  • 2 tablespoon minced ginger
  • 3 cloves garlic or 1 tablespoon grated
  • ½ teaspoon red pepper flakes or to taste
  • ½ cup cold water
  • 5 tablespoon low sodium soy sauce
  • 3 tablespoon rice vinegar
  • 1 ½ tablespoon hoisin sauce
  • 4 tablespoon granulated sugar
  • 1 ½ tablespoon corn starch
  • 1 teaspoon sesame seeds optional, for garnish

  • Toss chicken in corn starch until evenly coated.
  • Fry chicken in batches in olive oil until golden and cooked through. Drain on paper towels.
  • Mix cold water, soy sauce, vinegar, hoisin, sugar, and corn starch in a bowl until sugar dissolves.
  • Remove excess oil from skillet, leave 1 tbsp. Sauté garlic, ginger, and red pepper flakes for 30 seconds.
  • Add sauce to skillet. Simmer 2–3 minutes to thicken slightly.
  • Return chicken to skillet. Stir to coat in sauce and cook 2–3 more minutes.
  • Garnish with sesame seeds if using.
  • Serve hot over rice or with your favorite vegetables.

Notes

Store leftovers in the fridge for up to 4 days or freeze for later. Reheat gently on stove or in pressure cooker to retain moisture.
