Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds.
  • 1 pound baby potatoes Halved or quartered.
  • 4 tablespoons olive oil
  • 1 tablespoon minced garlic About 3 cloves.
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley For garnish.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and pepper. Whisk until well blended.
  • Add the halved baby potatoes to the bowl and toss them until they are well coated with the oil and seasoning mixture.
  • Spread the potatoes evenly on one side of a large baking sheet.
  • Pat the chicken breasts dry with paper towels and place them in the same bowl with the remaining oil mixture. Toss to coat the chicken evenly.
  • Arrange the chicken breasts on the baking sheet next to the potatoes.
  • Sprinkle the grated Parmesan cheese over both the chicken and potatoes.
  • Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are tender and golden.
  • Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.

Notes

For added flavor, you can marinate the chicken in the olive oil and garlic mixture for 30 minutes before baking if you have time.
Feel free to substitute the baby potatoes with your favorite type of potato or add other vegetables such as green beans or asparagus for extra nutrition.
