Equipment

  • 1 Large pot for boiling pasta
  • 1 Skillet or frying pan
  • 1 Colander
  • 1 Wooden spoon or spatula
  • 1 Knife and cutting board

Ingredients

  • 12 ounces pasta (such as fettuccine or spaghetti)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 pound mushrooms, sliced (such as cremini or button mushrooms)
  • ½ teaspoon red pepper flakes (optional)
  • to taste salt
  • to taste freshly ground black pepper
  • ½ cup vegetable or chicken broth
  • ¼ cup heavy cream (optional for a creamier sauce)
  • ¼ cup grated Parmesan cheese, plus extra for serving
  • for garnish fresh parsley, chopped

Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water before draining the pasta in a colander.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute or until fragrant, being careful not to burn it.
  • Add the sliced mushrooms to the skillet and cook for 5-7 minutes, or until they have released their moisture and are browned. Season with salt and black pepper.
  • Pour in the vegetable or chicken broth and let it simmer for about 3 minutes until slightly reduced.
  • If you want a creamier sauce, stir in the heavy cream and cook for another 2-3 minutes. Adjust the seasoning with salt and pepper as needed.
  • Add the drained pasta to the skillet, tossing to coat the pasta in the sauce. If it looks dry, add reserved pasta water a little at a time until you achieve the desired consistency.
  • Remove from heat and mix in the grated Parmesan cheese. Toss well to combine.
  • Serve the pasta hot, garnished with chopped fresh parsley and additional Parmesan cheese if desired.

Notes

For a vegetarian option, ensure the broth is vegetable-based.
You can add other ingredients like spinach or sun-dried tomatoes for added flavor and nutrition.
For a lighter variation, you can omit the cream entirely or substitute with a splash of lemon juice for brightness.
