In a mixing bowl, combine olive oil, minced garlic, dried Italian herbs, salt, and pepper. Stir well to create a marinade.
Add the diced chicken to the marinade and mix until the chicken is well coated. Let it marinate for at least 10 minutes.
While the chicken is marinating, soak wooden skewers in water for about 10 minutes to prevent burning (if using metal skewers, this step is not necessary).
Preheat the grill or grill pan over medium-high heat.
Take a piece of marinated chicken and place a cube of mozzarella in the center. Wrap the chicken around the cheese to form a 'bomb' shape. Secure the bomb onto a skewer.
Repeat the process until all chicken and cheese are used up, usually making about 8-10 skewers.
Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
When done, remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh chopped parsley before serving.
