  • pounds flank or flat iron steak cut into ¼ inch thin strips
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 1 tablespoon canola oil
  • 1 cup snow peas
  • 1-2 bunches baby bok choy
  • 4 tablespoons unsalted butter
  • 1 tablespoon sambal adds a nice kick, optional
  • ¼ cup beef or chicken broth
  • 4 cloves garlic minced
  • 1-2 inch piece ginger peeled and minced
  • green onions thinly sliced, optional garnish
  • fresh parsley finely chopped, optional garnish
  • rice to serve

  • Season your sliced steak with kosher salt and black pepper.
  • In a bowl, mix soy sauce, sesame oil, and cornstarch well. Toss the steak strips in and coat evenly. Let it sit for about 10 minutes.
  • Heat canola oil in pressure cooker or skillet over medium-high heat.
  • Add steak strips in batches and sear 2-3 minutes each side. Remove and set aside.
  • Add snow peas and bok choy to the same pan. Stir fry for 2-3 minutes until crisp-tender.
  • Add broth, butter, and sambal. Stir until butter melts and ingredients combine.
  • Return steak to pan. Stir everything together and cook until flavors meld.
  • Serve hot over rice and garnish with green onions or parsley if desired.

Notes

To get steak really thin, freeze it for an hour or two before slicing. You can customize the veggies — bell peppers, carrots, asparagus and more work well. Sambal, garlic, and ginger are the keys to deep flavor.
