1 large skillet or frying pan
1 cutting board
1 wooden spoon or spatula
1 measuring cups and spoons
1 pasta spoon or tongs
- 1 pound boneless, skinless chicken breasts Cut into bite-sized pieces.
- 1 tablespoon olive oil
- 4 cloves garlic Minced.
- 1 cup cherry tomatoes Halved.
- 1 teaspoon dried Italian herbs Oregano, basil, etc.
- 1 pound gnocchi
- 1 cup spinach Roughly chopped.
- ¼ cup grated Parmesan cheese
- Salt To taste.
- Pepper To taste.
- Fresh parsley Chopped, for garnish.
Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken pieces, seasoning with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.
Stir in the cherry tomatoes and dried Italian herbs. Cook for about 2-3 minutes, letting the tomatoes soften and release their juices.
Meanwhile, in a separate pot, cook the gnocchi according to package instructions, usually about 2-3 minutes or until they float to the top. Drain and set aside.
Once the tomatoes are soft, add the cooked gnocchi and chopped spinach to the skillet. Toss everything gently to combine and heat through for another 2-3 minutes.
Finish by stirring in the grated Parmesan cheese and adjusting seasoning with additional salt and pepper if necessary.
Remove from heat and garnish with fresh parsley before serving.
Feel free to add other vegetables, such as bell peppers or zucchini, for more nutrition.
Leftover Garlic Chicken Gnocchi Skillet can be refrigerated for up to 2 days. Reheat gently on the stovetop, adding a splash of water if needed to loosen the sauce.
For a spicy kick, consider adding red pepper flakes when cooking the garlic.
