Start by seasoning your steak with just one tablespoon of steak seasoning. Let it rest on the counter for about 15 minutes. This gives flavors a chance to soak in.
Cook your fettucini noodles like the package says. When done, drain ’em and set aside. You don't wanna mix noodles with sauce too early—keeps them perfect.
Heat a big skillet over medium-high heat and pour in your avocado oil. Get that oil shimmering before adding your steak bites.
Place the steak bites in a single layer, don’t crowd the pan. Cook for 3-4 minutes to brown then flip and cook another 3-4 minutes for medium-rare.
Take steak out and reduce heat to medium. Toss in 3 tablespoons butter and half your minced garlic. Sauté for a minute or two till it's fragrant.
Now pour in the heavy cream and half and half, bring it all to a gentle simmer until it begins to bubble.
Add the rest of the steak seasoning, cracked pepper, and your cooked fettucini into the sauce. Toss well so every noodle gets coated.
Put your steak bites back in, mix everything gently and serve up. Sprinkle with green onions and more parmesan as desired.
