Preheat your oven to 400°F (200°C).
Place the halved baby potatoes on a baking sheet. Drizzle with 1 tablespoon of olive oil, salt, and pepper. Toss until well coated. Spread them out in a single layer.
Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until crispy and golden brown, flipping halfway through.
While the potatoes are roasting, heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil.
Season the steak cubes with salt and pepper. Once the skillet is hot, add the steak in a single layer (you may need to do this in batches).
Sear the steak bites for about 2-3 minutes on each side, or until browned and cooked to your desired level of doneness. Remove from the skillet and set aside.
In the same skillet, lower the heat to medium. Add the butter, minced garlic, rosemary, and thyme. Stir and cook for 1-2 minutes until fragrant.
Return the cooked steak bites to the skillet, tossing them in the garlic butter to coat evenly. Cook for an additional 1-2 minutes to heat through.
Remove the potatoes from the oven and serve alongside the garlic butter steak bites. Drizzle extra garlic butter over the top if desired and garnish with fresh parsley.
