Garlic Butter Parmesan Rolls

These Garlic Butter Parmesan Rolls are rich, fluffy, and infused with roasted garlic and parmesan cheese. Made with all-purpose flour, eggs, whole milk, and slathered in garlic-parsley butter, they’re golden brown, fragrant, and the ultimate cozy side dish made easier with the help of a pressure cooker.

  • ½ cup Whole milk lightly warmed
  • 2 tablespoons Sugar
  • 1 envelope Yeast active dry or instant
  • 4 tablespoons Butter melted
  • 4 tablespoons Butter softened
  • 1 Egg room temperature
  • 1 Egg yolk room temperature
  • 2 cups All-purpose flour
  • 1 teaspoon Kosher salt
  • 4 Garlic heads tops chopped off
  • Olive oil for roasting
  • 2 cups Mozzarella cheese shredded, thick cut preferred
  • Parmesan cheese freshly grated
  • Parsley fresh chopped or dried
  • Minced garlic to mix with butter

  • Preheat oven to 400°F. Drizzle olive oil over garlic heads, wrap in foil, and roast for 35–40 minutes until soft and golden.
  • Let garlic cool slightly, then squeeze cloves out and mash into a paste.
  • In a large bowl, whisk warm milk and sugar. Sprinkle yeast on top and let sit 5–10 minutes until foamy.
  • Add melted butter, egg, and yolk to bowl. Stir in flour and salt to form sticky dough.
  • Knead dough on floured surface for 6–8 minutes until smooth and elastic.
  • Place dough in greased bowl, cover, and let rise 1 hour or until doubled.
  • Punch down dough and divide into 12 balls. Arrange in greased baking dish and let rise again 20–30 minutes.
  • Preheat oven to 375°F. Blend roasted garlic paste with softened butter and grated parmesan.
  • Brush rolls with garlic butter mixture.
  • Bake rolls for 18–22 minutes until golden brown and cooked through.
  • Brush baked rolls with remaining warm garlic butter.
  • Sprinkle with chopped parsley and extra parmesan if desired. Serve warm.

Notes

Store leftovers in airtight container at room temp for up to 2 days. Reheat in microwave or wrap and freeze for up to 2 weeks. Use pressure cooker with loose lid and steam cues to rewarm and maintain fresh texture.
