Boil a large pot of salted water. Once boiling, add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving a little pasta water, and set aside.
Heat a large skillet over medium heat. Add the butter and allow it to melt.
Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant.
Add the beef sausage pieces to the skillet. Cook until golden brown and cooked through, about 8-10 minutes. Season with salt, pepper, and dried Italian herbs.
In a mixing bowl, combine the heavy cream, grated Parmesan cheese, olive oil, garlic powder, salt, and pepper. Mix well.
Once the sausage bites are cooked, reduce the heat to low, and pour the cream mixture into the skillet. Stir well, allowing the cheese to melt and the sauce to thicken slightly.
Add the cooked pasta to the skillet with the sausage and creamy sauce. Toss everything together, adding a splash of reserved pasta water if necessary to achieve the desired sauce consistency.
Serve the sausage bites and creamy pasta on a platter, garnished with fresh parsley.
