  • 8 oz Unsalted butter softened
  • 1 head Garlic peeled and roasted
  • 0.5 oz Fresh thyme chopped
  • 0.5 oz Fresh rosemary chopped
  • 1 cup Parsley loosely packed and finely chopped
  • 1 tablespoon Orange or lemon zest optional, for a citrus kick
  • Sea salt and fresh pepper to taste

  • Preheat your oven to 350°F and roast garlic head for about 30 minutes until soft and caramelized.
  • Peel garlic cloves if not already done, then mash roasted cloves in a bowl.
  • Mix softened butter, herbs, zest, salt, and pepper in a bowl or pulse together in food processor.
  • Combine mashed garlic with herb butter until well blended.
  • Rub or brush garlic herb butter under and over turkey skin generously.
  • Add broth or water to bottom of pressure cooker for correct liquid depth.
  • Seal and cook turkey in pressure cooker using natural pressure release after cooking.

Notes

Store leftover baste-covered turkey in the fridge or freezer for quick meals throughout the week. Reheat gently to retain moisture.
