In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat together until smooth and creamy.
In a separate bowl, toss the diced strawberries with lemon juice. Add the strawberry mixture to the cream cheese mixture and stir until well combined.
Take one slice of bread and generously spread the cheesecake-strawberry mixture on top. Place another slice of bread over it to create a sandwich. Repeat this process with the remaining bread slices and filling to create a total of 4 sandwiches.
Prepare your breading stations: In one bowl, place the flour. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.
Dip each sandwich first into the flour, coating both sides, then into the beaten eggs, and finally into the breadcrumbs, pressing gently to ensure the crumbs stick.
In a frying pan or deep fryer, heat about 1 inch of vegetable oil over medium heat until hot (around 350°F/175°C).
Carefully place one or two sandwiches in the hot oil (do not overcrowd). Fry each side for about 3-4 minutes or until golden brown and crispy.
Use a slotted spoon to remove the sandwiches and place them on paper towels to drain excess oil.
Cut the sandwiches in half and serve warm, optionally dusting with additional powdered sugar on top.
