  • 3 tablespoons olive oil for caramelizing
  • 4 sweet onions large, thinly sliced
  • Kosher salt and pepper to taste
  • 1 pound short cut pasta already cooked
  • 3 tablespoons unsalted butter
  • 0.25 cup all-purpose flour
  • 2.5 cups milk
  • 0.25 teaspoon freshly ground nutmeg
  • 12 ounces gruyere cheese freshly grated
  • 4 ounces parmesan cheese freshly grated
  • 0.33 cup seasoned bread crumbs for topping
  • Fresh thyme to serve

  • Heat olive oil in the pressure cooker on medium. Add onions and salt. Stir often and cook until golden and soft, about 25–30 minutes.
  • Remove onions and set aside. Wipe the pot clean if needed, keeping the flavor residue.
  • Add butter and melt. Stir in flour and whisk for about 1–2 minutes until lightly golden.
  • Slowly whisk in milk while stirring constantly. Cook until thickened, about 5–7 minutes.
  • Add nutmeg, grated cheeses, and stir until melted and smooth.
  • Mix in caramelized onions and cooked pasta. Season with salt and pepper. Close lid, cook under low pressure briefly, then natural release. Serve with a sprinkle of thyme and bread crumbs.

Notes

For an even bigger flavor punch, try roasting the onions before caramelizing or add a splash of white wine during onion cooking. Store leftovers in fridge up to 4 days or freeze up to 2 months. Reheat with splash of milk for creaminess.
