French Onion Grilled Cheese Pressure Cooker Style

This delicious French onion grilled cheese is made easy with a pressure cooker to ensure a deep caramelization of onions without the fuss, combined with melty Gruyère cheese for irresistible comfort food.

  • 4 tablespoons unsalted butter
  • 1 pound yellow or Vidalia onions peeled, halved, and thinly sliced
  • Kosher salt and black pepper for seasoning
  • 2 teaspoons sherry, red-wine, or white-wine vinegar optional but adds zing
  • 4 ounces Gruyère cheese grated nice and fine
  • 4 slices bread not thicker than half an inch

  • Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add onions, season with salt and pepper, and cover. Cook until onions are softened, stirring occasionally, about 3 to 5 minutes.
  • Uncover, reduce the heat to medium-low, and continue cooking, stirring occasionally, until deep golden brown, about 20 to 25 minutes.
  • If desired, deglaze the skillet with vinegar and cook until the liquid has evaporated, about 1 minute. Set onions aside.
  • Combine onions with grated Gruyère cheese. Assemble by scooping half the mixture onto two slices of bread. Top with remaining slices, and press gently.
  • In the skillet, melt 1 tablespoon of butter over medium heat. Add sandwiches and cook until golden brown on bottoms, 3 to 4 minutes.
  • Add remaining 1 tablespoon of butter, flip sandwiches, and press down. Cook until cheese is melted and bread is golden brown, another 3 to 4 minutes.
  • Serve immediately.

Notes

For added flavor, use the vinegar while cooking. Enjoy the sandwich with your favorite side dish or dipping sauce.
