  • 340 g Chocolate chips high-quality dark chocolate
  • 170 g Butter
  • 9 Eggs large, separated
  • 250 g Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Almond extract
  • 41 g Cocoa powder plus more for dusting
  • 0.5 teaspoon Kosher salt

  • Preheat your oven to 375°F (190°C) and grease a 9-inch round cake pan, then dust with cocoa powder.
  • Melt the chocolate and butter together, either using a double boiler or microwave, stirring until smooth. Let cool slightly.
  • In a large bowl, whisk egg yolks with sugar until pale and fluffy. Stir in cooled chocolate mixture, vanilla, almond extract, cocoa powder, and salt.
  • Beat egg whites until stiff peaks form, then fold gently into the chocolate mixture in three parts.
  • Pour the batter into the prepared pan and smooth out the top. Bake for about 30 minutes.
  • Let the torte cool in the pan for 10 minutes, then flip onto a plate and dust with more cocoa powder before serving.
