Preheat your oven to 375°F (190°C) and grease a 9-inch round cake pan, then dust with cocoa powder.
Melt the chocolate and butter together, either using a double boiler or microwave, stirring until smooth. Let cool slightly.
In a large bowl, whisk egg yolks with sugar until pale and fluffy. Stir in cooled chocolate mixture, vanilla, almond extract, cocoa powder, and salt.
Beat egg whites until stiff peaks form, then fold gently into the chocolate mixture in three parts.
Pour the batter into the prepared pan and smooth out the top. Bake for about 30 minutes.
Let the torte cool in the pan for 10 minutes, then flip onto a plate and dust with more cocoa powder before serving.
