Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs.
  • 1 cup fresh pineapple chunks
  • 1 piece red bell pepper Sliced.
  • 1 piece green bell pepper Sliced.
  • 1 medium red onion Cut into wedges.
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 cloves garlic Minced.
  • 1 teaspoon ground ginger
  • to taste salt
  • to taste pepper
  • optional fresh cilantro or green onions For garnish.

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • In a mixing bowl, combine the soy sauce, honey, olive oil, minced garlic, ground ginger, salt, and pepper. Whisk until well mixed.
  • Place the chicken breasts in the same mixing bowl and coat them evenly with the marinade. Allow them to marinate for about 10 minutes.
  • While the chicken is marinating, prepare the vegetables. Cut the bell peppers and onion into desired sizes and place them on the sheet pan.
  • Add the marinated chicken breasts to the sheet pan, placing them among the vegetables.
  • Scatter the fresh pineapple chunks over the chicken and vegetables.
  • Pour any remaining marinade from the mixing bowl over the chicken and veggies.
  • Bake in the preheated oven for 25 minutes or until the chicken is cooked through and the vegetables are tender. Check that the internal temperature of the chicken reaches 165°F (74°C).
  • Remove from the oven and let it rest for a few minutes before serving.
  • Garnish with fresh cilantro or chopped green onions if desired.

Notes

For a more intense flavor, feel free to marinate the chicken for several hours or overnight in the refrigerator.
You can substitute the chicken with tofu or shrimp for a different protein option.
