  • 1 Pressure cooker with proper sealing ring and float valve all checked and ready

  • 4 Hot dogs go for the bigger ones if you want really hearty bites
  • 4 slices Bacon thick-cut is better, way more flavor
  • ½ cup BBQ sauce smoky or sweet, your choice
  • ¼ cup Diced jalapeños fresh or pickled, depends on how much spice you can handle
  • ¼ cup Shredded cheese cheddar's my fave for meltiness
  • 1 Toothpicks to keep that bacon wrapped tight
  • 1 cup Water or broth just enough for the pressure cooker's bottom

  • Wrap each hot dog with a slice of bacon real snug. Secure with a toothpick at each end.
  • Pour a cup of water or broth into your pressure cooker base.
  • Place a trivet or rack inside so your hot dogs sit above the liquid.
  • Arrange the bacon-wrapped hot dogs on the rack.
  • Seal the lid and set to high pressure mode for 8 minutes.
  • Quick release the pressure. Brush with BBQ sauce, sprinkle jalapeños and cheese. Melt slightly using sauté feature, or grill briefly.
