  • 2 tablespoons Avocado oil
  • 1 pound Ground beef
  • ½ teaspoon Salt
  • 1 small Onion diced
  • 3 cloves Garlic minced
  • ½ teaspoon Crushed red pepper flakes
  • cup Water
  • 1 small crown Broccoli cut into florets
  • 1 Bell pepper thinly sliced
  • 8 ounces Rice noodles or substitute rice
  • ½ cup Sriracha
  • 3 tablespoons Coconut sugar
  • 3 tablespoons Honey
  • ¼ cup Tamari
  • ¼ cup Unseasoned rice vinegar
  • Sliced green onions for serving
  • Sesame seeds for serving

  • Cook rice noodles by package instructions. Drain and set aside.
  • Heat avocado oil on sauté mode in your pressure cooker over medium-high heat.
  • Add ground beef with salt. Break apart and cook till browned, about 5-7 minutes.
  • Add diced onion, cook 3 minutes. Then stir in minced garlic and red pepper flakes, cook 1 minute.
  • Pour in water and add broccoli florets. Seal pressure cooker and steam for 3-4 minutes.
  • Quick release the pressure, carefully open lid.
  • Add bell pepper slices and rice noodles to the beef and broccoli mix.
  • Pour in the firecracker sauce (sriracha, coconut sugar, honey, tamari, rice vinegar) and toss to coat evenly.
  • Serve hot topped with sliced green onions and sesame seeds.

Notes

To reduce spice, cut back on sriracha and red pepper flakes. Store leftovers in separate containers for best texture. Reheat gently in microwave or on stovetop with a splash of broth.
