  • 1 large baking dish approximately 9x13 inches
  • 1 pot for boiling pasta
  • 1 oven
  • 1 mixing spoon
  • 1 measuring cups and spoons
  • 1 strainer

Ingredients
  

  • 8 ounces pasta penne, fusilli, or your choice.
  • 8 ounces feta cheese
  • 2 cups cherry tomatoes
  • 1 piece bell pepper, diced
  • 1 medium zucchini, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • to taste none salt and pepper
  • for garnish none fresh basil optional.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large mixing bowl, combine the cherry tomatoes, bell pepper, zucchini, minced garlic, olive oil, oregano, salt, and pepper. Toss well to combine.
  • Pour the vegetable mixture into the prepared baking dish. Add the cooked pasta to the dish.
  • Place the block of feta cheese on top of the pasta and vegetable mixture.
  • Bake in the preheated oven for 30 minutes, or until the feta is golden and the vegetables are tender.
  • Remove from the oven and gently stir to combine the ingredients, allowing the feta to melt into a creamy sauce.
  • Serve hot, garnished with fresh basil if desired.

Notes

For added protein, you can include cooked chicken or chickpeas.
Feel free to customize the vegetables based on your preferences or seasonal produce.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
